Vegetarian yummy hot dog with a twist!!




For the past one week i was craving for a yummy hot dog but was not getting time, and if i eat out it would be stocking myself with increased calories so one day while on my way back home i got these loafs of hot dog .
The next day when i was getting ready for my work i was happy to have one and that too a non -veg  but to my surprise my minced meat stock was finished by others but any ways i good veg would also do i thought..and for a vegetarian yummy hot dog ..

ALL YOU NEED IS


  • Hot dog loaf - 1 pc
  • Corn kernels -1tsp
  • Spinach - 1 medium size leaf finely chopped 
  • Cucumber - 1/3 finely chopped(pulp taken out)
  • Carrot - 1 tsp (grated)
  • Tomato sauce, cheese and nuts or peanut butter


ALL I DID WAS

Cut the loaf into two , in a pan tk 1/2 tsp of oil and roast the loafs a little bit, keep them separately.
Next in the same pan mix all the ingredients except sauce and butter ,saute them a little bit for 2 mnts sprinkle salt and black pepper .
Now first  sprinkle some cheese at the base of the loaf then fill it with the mixture on the cheese pour some nuts or peanut butter in between and some tomato sauce in a zig- zag motion(shown in the picture).

There you go a quick yummy vegetarian hot dog is ready!!!

Homemade orange peel powder with multiple benefits!!


Orange has multiple benefits..among them are...


  • Vitamin C present in it cures blemishes , acne and helps in lightning the skin tone.
  • Makes the skin look fresh and rejuvenates it.
  • Cures dandruff
  • Vitamin C present prevents ulcers.
  • Is rich in anti oxidants

HOW TO MAKE PEEL POWDER

Peel the orange and break it into as small pieces as you can with the help of your hands and keep them under the sun for drying , when it is hot then it will not take more than 2-3 days but during winters or when it is not so hot it may take a week but make sure you keep it everyday out under the sun.
Once they are dried properly and crisp grind them in a mixer till powdery.
Store it in an air tight container and prevent it from moisture.

Tasty Fulfilling filling!!



This filling gives me a hint of south indian food and i love it, i just love the taste of  coconut and anything made out of it. You can use this filling in sandwiches, rolls or in anything else wherever you require stuffing.

ALL YOU NEED IS


  • Carrot - 1/2( finely chopped)
  • Beetroot - 1 mini (finely chopped)
  • Grated coconut -1 1/2 tsp
  • Capsicum - small 1/2(finely chopped)
  • Tomato - 1 medium size(finely chopped)


In a nonstick pan on a medium flame pour few drops of oil only to make the ingredients wet then add all the chopped ingredients except tomato and 1tsp salt or according to your taste , saute them for 2 mnts , sprinkle some water and cover until they become soft then add  coconut cover again and switch off the flame and let it rest for 2mnts.
Uncover sprinkle 1/2 tsp of black pepper and green chilies if you wish


This filling would make two sandwiches.

Carrots are powerhouse of vitamins, contain antioxidants  and good for your heart.
Beetroots are high in immune boosting and good for your liver,kidneys, bones and pancreas.
Capsicum is a good source of Vitamin B6 and Magnesium, is good for your eyes and cardiovascular system.
Coconut is good for your bones.

NOTE

Whenever you chop tomato take out the seeds from between and then slice ..As it is consuming seeds are not good for health, they are said to help in the formation of stones in your kidney..

Fulfilling breakfast for you and for your child's lunch box microwave idli..





Hey!! this one is perfect for your fulfilling breakfast and your child will also love this for his/her lunch break ..Tasty yummy idlis .

For making this ..

ALL YOU NEED IS


  • Suji(semolina) - 1 cup
  • Curd(sour) - 1/2 cup
  • Carrot,beetroot - grated 1 tsp separately
  • Peanuts - 1tsp crushed
  • Tomatoes - finely chopped
  • Green chilies - 2 finely chopped
  • Sambhar powder - 1tsp(not mandatory)

Soak suji and curd in a vessel 3 hrs before making it and use water to make the consistency , the consistency should be thick and thick enough to be dropped and should not be flowing like water .
In case  you want to make it the next morning it is advisable to soak it at night because  it is important for suji to swell.
Once soaked properly mix carrot, beetroot, peanuts, tomatoes and green chilies( if your child does not prefer then avoid green chilies) into the curd- suji mixture then put 1 tsp of salt or according to your taste , black pepper and 1/2 tsp of sambhar powder.
On low flame in a separate small frying pan put 1/2 tsp oil(i prefer ghee) sprinkle 1tsp of mustard seeds and when they start to burst add  5-6 curry leaves washed and dried( so that the oil does not splash when wet).
Add the curry leaves and mustard seeds with the oil into the suji mixture that we made and the idli batter is ready.
Now pour the batter into the idli containers and cook it in the microwave for atleast 4-5mnts.
When done allow it to cool and serve ..

BENEFITS

Suji/semolina is very fulfilling and it will keep you full for around hrs.
Curd soothes the system and is very good for  stomach as it aids digestion.
Carrot is very good for eyesight, has a lot of anti- oxidants and also beneficial for heart health.
Beetroots are good for your immune system and helps maintain blood level .
Green chilies prevents any any of stomach infections

Healthy lunch idea!!



It is one of my favorite lunch ideas and gives me all the essential nutrients that are required.When i have scarcity of time, a busy day or am lazy..this one tops my checklist.


For this.......

                                                                                                  ALL YOU NEED IS



  • White rice - 1 cup
  • Arhar dal (pulse)- 1/2 cup
  • Pumpkin - 1/2 kg(sliced into small pieces)
  • Plain Milk/coconut mik- 1/2 glass
  • Red chillies - 2pc




You need atleast an hr to soak arhar dal(pulse) in water so that it softens and is easily cooked.
Also soak rice in water one hr before the reason for rice is also the same as dal.Minimum time required is 1/2 hr but if you have time enough then you can soak them even  3 hrs before.Before soaking both the things separately make sure to wash them atleast 3times  with your hand under clean water.

Once soaked take a pan and put it on fire half filled with water then transfer the uncooked rice in the water and cover it once it starts to boil uncover it cook until tender, and strain the water.
In another pan take one tbsp of oil (i prefer ghee) then put pumpkin pieces into the pan stir them for  minutes on medium flame then put dal and red chilies broken into two pieces, again stir them for 5 mnts after that put atleast 1/2 cup water and cover it on medium flame until dal becomes soft, when softened lower the flame put 1 1/2 tsp of salt or as per your taste, 1/2 tsp black pepper , and a pinch of red chilly powder, mix well and bring to a boil just once  after that pour milk and keep stirring gently till it starts to boil , once boiled cover it .
If you want  the gravy  not to be  thick can add more milk or vice versa. 

Your yummy lunch is ready... tastes best with plain rice..

Arhar dal is full of protein and is for digestion,also maintains blood pressure level and is beneficial for people trying to loose weight.

Pumpkin is good for your heart, vision and blood pressure level

Milk as everyone is aware of has lot of calcium and aids digestion.

Rice is best when eaten boiled i.e straining the water because all the starch is removed when it is boiled.

Kashmiri garam masala!!


For me the addition of a good homemade garam masala has a lot of contribution  in the making of a tasty or mouthwatering recipes.
It gives a punch to the flavours and all the ingredients in  it have tremendous health benefits .

ALL YOU NEED IS

  • Laung(clove) -15gm
  • Badi eliachi(Black Cardamom) -150gm
  • Choti eliachi(green cardamom) - 15gm
  • Javitri(Mace) -5gm
  • Jeera(Cumin seeds) -125gm
  • Jaifal(Nutmeg) - 5


Keep all the ingredients under the sun (so that if there is any moisture left it will evaporate ) for about an hr.

Once they are dried mix all the ingredients in a mixer and grin them well till it changes into a soft powder and its done.

 Your Kashmiri garam masala is made.

Store the powder in an air tight container so that its fragrance is maintained.

Cardamom -Most important health benefit is protection against gastrointestinal infection,controls cancer, is useful in improving blood circulation  and dental diseases.

Cloves - Most famous and important benefit is its temporary relief in toothaches,reduces upper respiratory infections , and has anti -inflammatory properties.

Refreshing drink for you!!



 Cucumber is my favourite during summer season, it has lot of benefits the most important being that it keeps you hydrated, whenever you feel like munching something slice the cucumber into half, sprinkle some rock salt and black pepper and enjoy it, nothing can be quick as this one in summers and also healthy.
For making this refreshing drink...

ALL YOU NEED IS


  • Cucumber -1
  • Oranges -2(seeds taken out)
  • Curd - 2 1/2 tbsp
  • Rock salt - 1/2 tsp
  • Sugar -1/2 tsp




Don't peel the cucumber but take out its bitterness (old method of rubbing)cut it into pieces and put them in the mixer then add oranges, rock salt, sugar,curd and lots of water( this would make around 2 glasses) and ice.
Grind properly to make sure that there are no pieces left or lumps.
Once done pour it in the glass and quench your thirst. I'am sure it would refresh and energize you instantly. 



BENEFITS

Cucumber is very good for your stomach, it cools the system, is good for your skin and bones.
Oranges are famous for providing benefits to your skin but do you know they are also good for your heart health, preventing cancer and maintaining blood pressure level.

Tasty and healthy whole wheat vegetarian brownie!!



 As you know i  believe in cooking using whole wheat grain whether it is for the children  or for us  and whether it is something sweet or salty. My motive is to make it as much healthy as i can.
Today what i am about to tell you is something which is loved by everyone, of every age group, my whole wheat brownie and it is totally vegetarian.So lets quickly start this  and for making it .


ALL YOU NEED IS


  • Ripe Bananas - 2
  • White Sugar/brown sugar -1 cup
  • Melted butter/ ghee -1/2cup
  • Vanilla essence -1tsp
  • Wheat flour -quarter cup
  • Salt - 1/2tsp
  • Cocoa powder -quarter cup
  • Peanut butter - 1 tbsp



Take a bowl and mash the bananas properly with a fork or whatever you are comfortable with.
Once done then add all the other ingredients except peanut butter.. Mix well.
Grease the tray with some ghee and sprinkle some cocoa powder, then pour the mixture in it, even the mixture by shaking it a little . 
Drop some peanut butter on all the four corners and make a zig zag design with the help of a fork or a flat knife.
Put the tray in the oven or microwave ( in convection mode ) at 180`C for 30 mnts.
Once done and cooled you can make a design by sprinkling some white sugar on it.
and your yummy tasty treat is ready.

Yummy moong dal mix!!



Here is one more healthy snacking!!It is said that percentage of your protein intake should be equal to your weight so this is one more option for the same . Pulses are full of protein..If you are hitting the gym or exercising this is good option to have.


ALL YOU NEED IS

  • Common onion or spring onion(finely chopped) - 1 medium size
  • Yellow moong dal -1 cup
  • Mustard seeds(small) - 1 tsp
  • Curry leaves - 6-7
  • Tomato(finely chopped) - 1 small
  • Capsicum (finely chopped) - 1 small
  • Green chilies(if required) -as per your spicy quotient 
  • Lemon to be sprinkled

First of all soak moong dal in water for about an hr then after an hr drain the water.
In a pan take 1tsp of ghee , then mustard seeds when they begin to crack put curry leaves and then onion , once onions are little brown put capsicum stir it for a little while and then put moong dal  and saute a little bit(around 1 minute) and then pour 2-3 tbsp of water and cover so that the dal becomes soft, once it becomes soft put chopped tomatoes and mix everything for a minute once done sprinkle some lemon juice on it and its ready to be eaten..

It will taste best if you eat it on top of a slice and even better with a homemade wheat bread.
Can also make a sandwich of it.

It is filled with protein and a good source of dietary fibre, the best part is that it is easy on your stomach.
It is also a good source of B complex and also rich in potassium, calcium, vitamins.

Pulses dosa mix!!




When i was on a diet i was looking for options to skip roti/chapati but i wanted something which uses very less oil , is quick and also benefits my system.  I tumbled through this idea.

So ever wondered or confused about with what to replace chapati/roti when you are on a diet or may be sometimes don't feel like eating. Here i have something really nutritious for you which is also quick..


 ALL YOU NEED IS


  • Lal masoor  dal - 1/2 cup
  • Chana dal - 1 cup
  • White rice - 1/2 cup
  • Chilka moong dal -1cup
  • Ginger - 2tbsp(chopped) including
  • Melon seeds -2 tsp
  • Flax seeds - 2tsp
  • Red chillies - 2
Soak only the pulses in water till they  get swollen for about 7 -8 hrs. Once they are swollen enough grind all the ingredients including ginger, melon seeds and flax seeds and red chillies in a mixer with the help of soaked water.(Don't throw the water in which the pulses were soaked) .The batter should not be very thick, it should be in a consistency enough so as to spread the batter easily on a pan.
Once grinded and done pour the batter in a bowl.

You can even store it in the refrigerator but if you want to make it instantly after grinding then take 1 tsp of ghee on a non stick pan and spread the batter like it is done for a  dosa(thin crust).
cook it from both the sides and it is done.

You can have it with any vegetable ... OR make a roll fill it with some tasty filling, wrap it with a silver foil and give it to your children!!

The melon seeds are good for your eyesight as they contain vitamin A & C, also they are good for your heart, prevents constipation , dehydration and ulcers, levels your blood pressure and is also good for your skin and hair, also helps prevent cancer.

The most important benefit of pulses are that they contain good amount of protein and are fibrous .

Most importantly flax seeds help in weight loss, lowers the risk of cancer, have anti aging properties,improves digestion, helps in controlling sugar levels and is also good for your skin and hair.

Ginger aids digestion and also helpful for cardiovascular health.

Moong dal cheela!!




This is one of my favourite and quick recipes!! when i cannot think of any other fulfilling recipe this comes to my rescue, even for my sons lunchbox this is just perfect .

I always keep moong dal powder ready.

To make it .....

ALL YOU NEED IS


  • Moong dal powder -  5 tbsp
  • Carrot grated - 2 tsp
  • Beetroot - 2tsp
  • Parsley - 1tsp
  • Onion - 3tsp
  • Tomato - 3 tsp
  • Some crumbled cottage cheese

In a bowl mix all the ingredients and make a paste it should not be very thick neither watery, 
but if you like a little thick then make the paste accordingly .

On a pan pour 1 tbsp of ghee then pour about 2 to 3 tbsp of batter and spread evenly and then cook it on a medium flame.
Cook it depending upon how crisp or soft you want it to be!!
Take it out on a plate and enjoy it with sauce or chutney ..
