It is one of my favorite lunch ideas and gives me all the essential nutrients that are required.When i have scarcity of time, a busy day or am lazy..this one tops my checklist.
For this.......
ALL YOU NEED IS
- White rice - 1 cup
- Arhar dal (pulse)- 1/2 cup
- Pumpkin - 1/2 kg(sliced into small pieces)
- Plain Milk/coconut mik- 1/2 glass
- Red chillies - 2pc
You need atleast an hr to soak arhar dal(pulse) in water so that it softens and is easily cooked.
Also soak rice in water one hr before the reason for rice is also the same as dal.Minimum time required is 1/2 hr but if you have time enough then you can soak them even 3 hrs before.Before soaking both the things separately make sure to wash them atleast 3times with your hand under clean water.
Once soaked take a pan and put it on fire half filled with water then transfer the uncooked rice in the water and cover it once it starts to boil uncover it cook until tender, and strain the water.
In another pan take one tbsp of oil (i prefer ghee) then put pumpkin pieces into the pan stir them for minutes on medium flame then put dal and red chilies broken into two pieces, again stir them for 5 mnts after that put atleast 1/2 cup water and cover it on medium flame until dal becomes soft, when softened lower the flame put 1 1/2 tsp of salt or as per your taste, 1/2 tsp black pepper , and a pinch of red chilly powder, mix well and bring to a boil just once after that pour milk and keep stirring gently till it starts to boil , once boiled cover it .
If you want the gravy not to be thick can add more milk or vice versa.
Your yummy lunch is ready... tastes best with plain rice..

Rice is best when eaten boiled i.e straining the water because all the starch is removed when it is boiled.
